About Our Program

On November 28, 2016, a new Long-term Care federal regulation stated that all facilities must designate a Director of Food and Nutrition Services who meets the regulation’s minimum qualifications. One option for minimum qualification is a Certified Dietary Manager.

In order to prepare students for the certification option, Massasoit Community College has developed a 3-part Dietary Manager program. Upon successful completion of all 3 courses, students will receive a Massasoit certificate of completion and are then eligible to apply for the national Certified Dietary Manager exam offered through the Association of Nutrition and Foodservice Professionals.

Courses must be taken in sequential order.
1. Nutrition Fundamentals - Coming Fall 2023!

This course will cover the science of food intake, building blocks of nutrition, digestion and nutrient utilization, food allergies and alternative/complementary medicine. Students will also learn about body systems, medical nutrition, and resident care plans review.

2. Food Supervision & Personnel - Coming Spring 2024!

This course will cover menus, standardized recipes, food production systems and quality assurance. In addition, practices for recruiting, hiring and managing staff will also be covered.

3. Sanitation, Safety, and Business Operations - Coming Spring 2024!

This course will cover safe food handling thru the flow of food. Students will also learn how to manage a monthly operating budget, capital budget, department layout, revenue and cash handling.

CDM Exam Review
Are you preparing for the CDM Credentialing Exam? This interactive 8-hour course will provide you with a review of the knowledge and skills in the following areas - Nutrition Fundamentals, Medical Nutrition Therapy, foodservice communication and personnel, business operations along with food sanitation and safety. Upon successful completion, you will feel more confident about passing the CDM credentialing exam.
