Insight Lecture Series
This course will use traditional Sicilian recipes that promote and maintain health benefits of a Mediterranean diet. Recipes will include vegetable, seafood, poultry, and beef, with options for desserts.

Aaron John Bourque earned a B.A. in Modern European History from Keene State College, a Post-Baccalaureate Certificate in Studio Art from the School of the Museum of Fine Arts, and an M.F.A. in Studio Art from Tufts University. Aaron is an artist, photographer, and educator. Aaron brings his experience as a studio manager, a university lecturer, program coordinator, and business owner to each project. Having taught from the community to graduate level, Aaron has helped students develop their creative voice for nearly a decade.
Celeste Cunningham earned a B.A. in History from the University of Arizona, an M.Ed. in History from UMass Boston, and a Certificate of Advanced Graduate Studies/Leadership from Cambridge College. A lifelong educator, Celeste has worked with many different kinds of students in areas of teaching, advising, motivating, and building success strategies. She has served at the Community College level for 11 years, teaching History as well as American Government, State and Local Government, Sociology, Speech, First Year Seminar and several Psychology courses.
Lloyd King holds a B.S. in Computer Information Systems from New England Institute of Technology and currently works for Massasoit Community College as a Senior Web Developer. Lloyd, ‘Three Feathers’, is a member of the Metis Nation and has played on drums at several Powwows around the Northeastern United States for almost ten years. He is an avid learner of the Native culture and history and likes to share what he has learned.
Jennefer Marchetti earned her certification as Health Coach through the Dr. Sears Wellness Institute and her certification as a personal trainer. For over seven years, she has been helping her clients meet their fitness goals by providing guidance in proper exercise and training. Jen enjoys helping others achieve their goals of health and wellness so they can face each new challenging day feeling healthy and strong.
ERIN MCCOY earned a B.A. from Point Loma Nazarene University and a Masters of Library and Information Science from Southern Connecticut State University. Erin has been a librarian for almost 20 years in a variety of contexts. She currently works at Massasoit as a Reference and Instruction Librarian, teaching students, helping manage the collection and working to create a hospitable and accessible space for all students.
